https://www.youtube.com/watch?v=e_PVvAU77Qs , recipe for potato sun dried chips 1) ist peel off the potato ,clean the potato comletely then fill the water into one vessel, slice the potato and towards that water , normal water, big potatoes good for more chips, if u need thicness put some pressure otherwise low pressure for thin chips, thin chips after sun dried more thin, and this slices some starch , so clean three times , remove starch , then into one vessel take 3/4 th of water , add patika 1 inch to taht water, salt one sppoon, soda one sppon, because f ths soda , salt, patika it will not turn into black sooly, now add potato slices to water, put a lid, soak 4 hours, because of 4 hours taht slices will absorb more water, then stove on, put one vessel on to stove, half o fthe water, one spoon sal,t one sppon baking soda, chitikedu patika, boil that , once water boiled, add potato slices, add water if required, if potatots not sink completely add some more water tillit sinks, boil for 15-20 minutes, have to starch completley out that white color layer w ecan see, remove that starch, layer formed on , allo slices bend ,if it fragile then we can turn off flame, move that slices into cold water, if we stay their in ot water , it will cooking again, after 5 minutes, seperate from water, starain taht potatoes and places into starainer, after some minnutes wholle water will comes out, 10-15 minutes, place under sunlight upto 12 hous re write above dry for 1-2 days

Ingredients
Big potatoes (large size gives more chips)
Water (as needed)
Salt – 1 spoon (plus extra for boiling)
Baking soda – 1 spoon
Patika / alum – small piece (about 1 inch + a pinch)
Step 1: Prepare the Potatoes
Peel the potatoes and wash them thoroughly.
Take a vessel filled with normal water.
Slice the potatoes directly into the water to prevent discoloration.
Apply more pressure for thick chips.
Apply less pressure for thin chips (thin chips become even thinner after drying).
Step 2: Remove Starch
The slices will release starch.
Wash and rinse the potato slices 3 times until most starch is removed.
Step 3: Soaking
Take a vessel with ¾ water.
Add:
1 spoon salt
1 spoon baking soda
1 inch piece of patika (alum)
Mix well.
Add the potato slices, cover with a lid, and soak for 4 hours.
This helps slices absorb water and prevents blackening.
Step 4: Boiling
Place a vessel on the stove with ½ water.
Add:
1 spoon salt
1 spoon baking soda
A pinch of patika
Bring the water to a boil.
Add the soaked potato slices.
If slices are not fully submerged, add more water until they sink.
Boil for 15–20 minutes.
White starch foam will form on top—this shows starch is coming out.
Slices should bend easily and feel fragile.
👉 Once slices bend without breaking, turn off the flame.
Step 5: Cooling & Draining
Immediately transfer slices into cold water.
This stops further cooking.
After 5 minutes, drain the water.
Place slices in a strainer for 10–15 minutes until all excess water drains out.
Step 6: Sun Drying
Spread the slices evenly on a clean cloth or tray.
Keep them under direct sunlight for up to 12 hours a day.
Dry for 1–2 days, turning occasionally.
Once completely dry, store in an airtight container.
